Sugar Cookies - No Dairy

These are my no-dairy rolled sugar cookie recipe. It is modified from an old Good Housekeeping Cookbook we keep on the shelf.

I wish I could find something contemporary that had a similar style as this cookbook. Either they are branded, complicated or more pretty than useful.

Recipe for Rolled Sugar Cookies

Rolled Sugar Cookies - No Dairy

  • 3-1/4 C Flour
  • 1-1/2 C White Sugar
  • 2/3 C Coconut Oil
  • 2 Eggs
  • 2-1/2 TSP baking powder
  • 1 TSP Vanilla Extract
  • 1/2 TSP Salt
  • 1 Egg white and 1TB water for glaze.

Rolled Sugar Cookies ND - continued

  1. Into a large bowl add everything but egg white. Beat until well mixed.
  2. Shape dough in ball, wrap and place in the fridge. 2-3h will do it, but overnight is fine too.
  3. When chilled, pre-heat oven to 400F and roll out dough on a floured surface.
  4. Roll thin for crisp cookies, and 1/8-1/4" for softer ones.
  5. Flour your favourite cutters and cut. Re-roll the trimmings until all used.
  6. Place cookies on cookie sheets about 1/2" apart. Glaze with the egg white & water mixture.
  7. Bake for about 8min or when very lightly brown. Cool on wire racks.

Hints and Tips

  1. Sprinkle the tops with sprinkles, decorating sugar or plain white sugar before placing in the oven.
